Kombucha is a fermented tea that has been made around the world since ancient times.
Kombucha is made by brewing tea from the leaves of the tea plant (Camellia sinensis), adding sugar, and then fermenting the sweetened tea with a kombucha SCOBY (Symbiotic Colony Of Bacteria and Yeast). The yeasts consume the majority of the sugar, producing nutrients, B vitamins, carbonation, and a small amount of alcohol while the bacteria create probiotics helpful for digestion and a delicious tart clean flavor. The finished beverage may be flavored with fruits, herbs, and botanicals.
